The remnants of a late afternoon breakfast sandwich. Eggs, brie, goat cheese, bacon, cilantro, and chilled avocado. The bread was fried in bacon fat. Usually, I’d have some of my own home-baked bread on hand, but I’ve been using Trader Joe’s Shepherd’s Bread out of laziness. Kind of light and falls apart easy, but a solid white bread which toasts well if you’re careful. The eggs are cooked in a technique demonstrated by Gordon Ramsay. I added a bit of goat cheese to the scramble, and was able to coax it to perfect consistency after it emerged a bit runny.
